Lemon and Spirulina Energy Balls
A promise is a promise! A second energy balls recipe that I prepared for my postpartum. This time they are, let’s say a little more unusual. And certainly not to everyone’s taste because of the spirulina. At home I think I’m the only one to be a real fan of this micro green algae with the taste… of seaweed ^^!! However, do not run away, these are lemon and spirulina energy balls, they have a fresh side that I love and change from the chocolatey flavor of the previous ones.
I’m not going to do a rundown on spirulina here, I’m not trained in nutrition to tell you about it. However, you will find a lot of information on the web. What I can tell you quickly is that spirulina is used as a food supplement for its many benefits for your body. It is rich in vegetable proteins, iron and an excellent antioxidant.
SPIRULINA CONSUMPTION DURING PREGNANCY AND BREASTFEEDING.
I haven’t found any reliable information on its consumption during pregnancy. So I myself made the choice not to consume it during my pregnancy (a completely personal choice). But I will have this little pleasure for after the birth, and during breastfeeding. Again this is a personal choice checked with the midwife who follows me. Before starting a cure of spirulina, please seek advice from the health professionals around you.
Like the previous ones, these energy balls are very easy to make, especially if you have a food processor. Put everything in the food processor, mix, roll and that’s it. They can easily be kept for a big week in the fridge in an airtight container or up to a month in the freezer in a freezer bag.
In a word, I love them, I can’t wait to give birth just to be able to eat them ;). (And for a thousand other reasons of course!).
Lemon and Spirulina Energy Balls
Ingredients
- 200 g dates (Medjool are the best but often a bit expensive, so take which dates you can find.)
- 40 g sultanas
- 4 tsp powdered spirulina
- 80 g oat flakes
- 120 g whole almonds
- 2 tsp chia seeds
- 1 lemon zest
- 4 tbsp lemon juice
Instructions
- Put the almonds and oats in the bowl of your food processor and blend for 30 seconds, until you get a coarse powder.
- Add the dates, sultanas, chia seeds, spirulina, lemon zest and juice and mix until obtaining a homogeneous mixture.
- Roll the energy balls and place them in the freezer for 1 hour to allow them to set.
- Then store these energy balls in an airtight box in the fridge.
- If you want to freeze them, leave them in the freezer a bit longer. Put them in a sealed freezer bag after they are totally frozen.
And here I am, still at home, waiting for the big day. In the meantime I’m enjoying my Mini, I’m finishing some small projects that I didn’t even hope to finish, I’m enjoying the rays of the sun in Finland which slowly melts the snow down (Yeeeeeessss). In short, we wait patiently!
