French Financiers

I’m back after a little break next to a lake in Finland! If you want to enjoy the summer in Finland, you have to do it between June and July. In August it’s already kind of over..! As I wanted to see some sun and to accumulate some heat, I did it ;)! Today I’m back with a French classic recipe: almond financiers.

Financiers are little cake, originally they are rectangle shape, made from almond and butter. It’s a really easy and quick recipe (Trust me, it really is!!). If you have some leftover of egg whites in your fridge, and are too lazy to make macarons (I kind of understand…) or french meringues, financiers are for you ! Mix all of the ingredients together, add some lemon zest, some raspberries, or some pistachios powder or even chocolate and put them in the oven, you are all done!

Just the time to prepare a tea (or coffee) for yourself and you will be ready for a wonderful tea time. Easy peasy, I told you. When they are just coming out of the oven, they are crispy outside and soft inside, it’s perfect! You can keep them few days in a airtight container, they will stay soft with a strong taste of almond. And maybe a taste of butter as well. Just a bit, or a lot, because we do love butter isn’t it? If you want to make them special, put the effort in making a brown butter. Like for the cookies, it will add a special taste to it. But if you don’t want to bother with the brown butter, the financiers will be equally good.

I have offered some to our Mini’s teacher and assistant to thanks them for their work, and I think that they loved it 🙂

Ingredients

  • 3 egg whites (90g)
  • 30 g flour
  • 120 g icing sugar
  • 60 g ground almond
  • 100 g butter
  • 1 zest of lemon

Instructions

  • Make the brown butter: melt it in a small saucepan for 5 minutes, until it becomes brown but not burned! Let it cool down for few minutes.
  • Preheat the oven at 210°C.
  • Mix all of the dry ingredients together: ground almond, flour, icing sugar and lemon zest if you are using it.
  • Add the egg whites and mix well with a whisk.
  • Add the butter and mix well until you obtain a homogeneous mix.
  • Put the batter in silicone moulds (Sometimes I am using half sphere moulds like this one and it's working perfectly).
  • Cook the financiers for 20 minutes in the oven. Keep an eye on them, if they become dark too quickly, lower the oven's temperature.

Notes

On the pictures you can see pistachios powder on top of the financiers. As I told you before, you can be creative on the toppings. If you don’t like lemon you could put orange zest instead. Raspberries are working well with lemon and almond. Or you can skip all of that and put chocolate instead. Keep that in your mind: feel free and enjoy 🙂
